Quinoa Chili Recipe

Okay...here it is as promised, Quinoa Chili

Ingredients

1 cup quinoa 3 cups chicken broth 3 cloves garlic, minced 1 onion, diced 2 (14.5-ounce) cans diced tomatoes 1 (15-ounce) can tomato sauce 1 (4.5-ounce) can diced green chiles 1 1/2 tablespoons chili powder, or more, to taste 2 teaspoons cumin 1 1/2 teaspoons paprika 1 1/2 teaspoons sugar (I used cane sugar) 1/2 teaspoon cayenne pepper 1/2 teaspoon ground coriander Kosher salt and freshly ground black pepper, to taste 1 (15-ounce) can kidney beans, drained and rinsed 1 (15-ounce) can black beans, drained and rinsed 1 1/2 cups corn kernels 3 tablespoons chopped fresh cilantro leaves Juice of 1 lime, optional 1 avocado, diced

Instructions

In a large saucepan of 2 cups of chicken broth, cook quinoa according to package instructions; set aside. Add to crock pot all the ingredients except the quinoa. Add in 1-2 cups of chicken broth and place on high for a few hours, add quinoa the last 30 minutes. Serve immediately with avocado, if desired.

If you are in a hurry, you can do this on the stove in about 35 minutes. There is something about it cooking in the crockpot on a rainy afternoon that I love, it is really up to you. I would love to hear what you think.
