Quick & Easy Mango Avocado Chicken Salad

Lately, my evenings have been spent running errands and checking off my ever expanding to-do list. It is so easy just to run through the drive-thru or order pizza. Blek! This salad is quick and easy and I always make enough chicken that I can just grab and go when I'm having a crazy day. It beats take-out ANY DAY!

Ingredients

  • 2 cups arugula leaves or mixed greens
  • Half of a mango, peeled and chopped
  • Half of an avocado, peeled and sliced
  • Sliced red onion (optional)
  • 1 oz. crumbled blue cheese
  • 4oz. chicken tenderloins (about 2 pieces)
  • 2 Tbsp. salad dressing

Direction: 1. Coat chicken with cajun seasoning and garlic. 2. Grill chicken until golden brown on both sides, about 3-5 minutes per side. 3. Assemble salad and pour on dressing (I use Annies Homegrown Balsamic Vinaigrette, 8 Ounce). 5. Top with sliced cajun chicken and crumbled blue cheese.
